Watermelon seeds don't come from just any watermelon.
The kind with white flesh is best because they have the most seeds. Once the
seeds are separated from the flesh, workers have to wash away the mucus covering
the seeds' surface. To do this, the raw seeds need to soak for a whole day in the
kind of edible lime used in making tofu.
